Less well known is the cheddar factory in Somerset, very similar to your Wensleydale. Though my eldest grandson, taken there when small, has never touched cheese since, says he is allergic to it. We saw the cheese-making demonstration,watched the factory floor working, made butter ourselves(!) and had the traditional fruit cake and cheese in the cafe.The staff are friendly and knowledgeable and those doing the demonstrations are good raconteurs.
