A Victoria Sponge - or Sandwich cake - is what I think all my US followers would call a Layer Cake. It is two sponge cakes baked
in separate tins and then sandwiched together with some kind of butter cream. So many folk have asked that I thought I had better put on a special post about it.

….and there's no cake, layer or otherwise, here in the US that holds a candle to a good homemade Victoria Sponge, and eaten preferably at tea time in England. Take my word for this please American readers.
Pat, I cross the pond tonight. Perhaps tomorrow afternoon at the Southampton hotel I will indulge in afternoon tea………if not, I'll have my Victoria sponge on board the Queen Victoria as we sail away Thurs. afternoon. How amazing is that!!!!!!

Love Victoria Sponge! Love it stacked, baked in sheet pan with cinnamon-sugar sprinkled over before baking, with lemon or orange zest added, so many variations. Oh my..so so good.
